Began his career in the culinary and food services industry 45 years ago, receiving many accolades. Dirk is an award winning chef, an expert in food safety training, food defense plans & HACCP plans. He performs third party audits, SQF services and GAP Audits.
Dirk is a Food Safety Instructor teaching thousands of students in both ServSafe and HACCP certification classes.
Dirk began with the Howard Johnson's Group, completed his culinary apprenticeship with the Mills Falls Restaurant - one of the only Five Star Five Diamond Restaurants to exist in Massachusetts. Dirk then continued his career working as an Executive Chef in major hotels, fine dining restaurants, and private clubs, while earning industry degrees and certifications.
In 2003 Dirk was recognized for his culinary excellence by Gourmet Magazine. Dirk also penned, "Fish Tales: A Seafood Lovers Must".
As a sanitation lead, trainer, and food consultant, Dirk has worked with an impressive list of clients:
Restaurant Depot, Marriott Hotels, vincentes Supermarkets, Prinipal Owners of the Boston Celtics, Pier 4 and Anthony Athanas. Dirk has written multiple menus, and HACCP Plans for his clients, and consulted on (30+) restaurant openings.
